General purpose product. Use for moulding, panning, enrobing, hand-dipping and flavouring of cakes, icings, etc.

 

Heat in bain marie / water bath to 46oC. Commence tempering process, i.e. re-heat to 23-33oC at which point the temperature is held and the work is commenced, remember to continue stirring in the heating and cooling stages. Set slowly.

 

No added colours, 46% cocoa solids.
